soidogz Posted March 6, 2021 Share Posted March 6, 2021 Hi all I have a piece of pork 1786g in brine 1.5 litres of water I also added 8g of cure #1, 55g of salt, 30g sugar it's now been in the brine 4 days, how long should I leave it in for? Also it has no skin or fat on it so I was thinking of boiling it like Gammon, or if I was to smoke how long would you smoke it for.
